Materials
- 2 self raising flour
- 2 tablespoon brown sugar
- ½ teaspoon bicarbonate of soda
- 1 teaspoon cinnamon
- 1 cup grate carrot
- 1 cup grate zucchini
- ½ pecan nuts
- 2 eggs
- ¾ cup buttermilk
- ½ cup canola oil
Instructions
- Before you begin, turn the oven to 200 degrees C.
- While the oven is heating, put flour, sugar, soda and
- cinnamon into sifter and sift it to a large bowl.
- Grate the carrot and zucchini, chop the nets and add these to the sift ingredients.
- In separate bowl, lightly beat the eggs with a fork.
- Make a well in the centre of the ingredients and add beaten eggs, milk and oil.
- Mix with a fork until the ingredients are combined.
- Be careful not to mix all the ingredients to long or your muffin might be tough.
- Drop large tablespoon of mixture into non-stick muffin tins.
- Bake in the oven for 20 minutes.
- Eat them while they're warm.
